Kombucha contains live probiotic cultures, active enzymes and polyphenols, acetic acid, butyric acid, gluconic acid, glucuronic acid, lactic acid, malic acid, oxalic acid, usnic acid, and is rich in B-vitamins. Health claims for kombucha focus on a chemical called glucuronic acetate, a compound that is used by the liver for detoxification that is being explored independently as a cancer preventive agent. Kombucha fortifies the body's natural supply of this substance, enhancing the detoxification process. Glucuronic acid is also the building block of a group of important polysaccharides that include hyaluronic acid (a basic component of connective tissue), chondroitin sulfate (basic component of cartiladge) and mucoitinsufuric acid (a building block of the stomach lining and the vitreous humor of the eye.)

Beyond Kombucha is fermented in oak barrels and bottled locally in Astoria, New York, using only the highest quality organic teas and robust cultures. In addition to the powerful health benefits for which kombucha is known, Beyond Kombucha is distinguished by the unique flavor characteristics of the variety of fine teas used in it's preparation, as well as the delightful overtones imparted by the oak casks. These are truly champagne quality kombuchas that can be sipped throughout the day, and their digestive properties and rich flavor make them an excellent accompaniment to fine food in lieu of wine.

Oak barrel fermented kombuchas made with the following teas are currently available: Formosa Oolong, Rooibos Mate, and an energizing blend of Yerba Mate and Gunpowder Green infused with guarana, American Ginseng, licorice root and crystalized ginger.

Glass fermented varieties available by request include Siyah Çay (Turkish Black), Japanese Green with Matcha, and Yunnan Aged Pu-erh.
